  • Nowadays fresh-cut fruits and vegetables are becoming more and more popular on the market due to their nutrition,convenience and sanitation.However,microorganisms present in fresh-cut fruits and vegetables can cause foodborne illnesses or spoilage,which is a key factor for the quality and safety of fresh-cut fruits and vegetables.The microorganism controlling of fresh-cut fruits and vegetables can promote the health and stable development of fresh-cut fruits and vegetables industry.Natural antimicrobials have the advantage of efficient,non-toxic,and environmentally friendly.The application of natural antimicrobials to control the microorganisms in fresh-cut fruits and vegetables can reduce the adverse effects of the chemical antimicrobials on human health.In this paper,the research progress in the use of natural plant,animal and microbial antimicrobials to control the microorganisms in the fresh-cut fruits and vegetables were reviewed.
