Abstract
The silkworm pupa protein is rich in 18 kinds of amino acids. It is a kind of high nutritional value of natural animal protein. The eight kinds of essential amino acid content were more than 40% of total amino acids in silkworm pupa protein. It had been used multiple industries in recent years because of its amino acids balance proportion and very high use value. In this study,the species and content of the silkworm pupa protein were described and further the allergen information was summarized. On this basis,the comprehensive utilization of silkworm pupa protein in food,feed,pharmaceutical,textile,biological and other industries was summarized.
